I'm considering modifying my GT-R's exhaust, but I'm unsure if it's worth it. Will it actually improve my car's performance, or am I better off leaving it stock?

I highly recommend leaving your exhaust stock, as Nissan engineers spend a lot of time and resources designing the perfect exhaust system for optimal performance. Modifying it could throw off the car's engine dynamics and even void the warranty.
